Famous Mughlai Chicken | पुरानी दिल्ली की मशहूर चिकन मुग़लई | Mughlai Chicken Curry | Chef Ranveer



𝗣𝗨𝗥𝗔𝗡𝗜 𝗗𝗜𝗟𝗟𝗜 𝗠𝗨𝗚𝗛𝗟𝗔𝗜 𝗖𝗛𝗜𝗖𝗞𝗘𝗡 – (𝙎𝙚𝙚 𝙙𝙚𝙩𝙖𝙞𝙡𝙚𝙙 𝙩𝙚𝙭𝙩 𝙧𝙚𝙘𝙞𝙥𝙚 𝙗𝙚𝙡𝙤𝙬) This one’s straight from my heart and from the lanes of Old Delhi! Mughlai chicken from my Dilli memories.

𝗥𝗘𝗖𝗜𝗣𝗘 𝗙𝗢𝗥 𝗣𝗨𝗥𝗔𝗡𝗜 𝗗𝗜𝗟𝗟𝗜 𝗠𝗨𝗚𝗛𝗟𝗔𝗜 𝗖𝗛𝗜𝗖𝗞𝗘𝗡
Preparation time 10 minutes
Cooking time 30 minutes
Serve 2-4

Ingredients
For Gravy
3 tbsp Oil, तेल
2 tbsp Ghee, घी
3 no. Green cardamom, हरी इलायची
2 no. Bay leaf, तेज पत्ता
2-4 no. Cloves, लौंग
1 tsp Cumin seeds, जीरा
1 ½ inch Ginger (peeled & roughly chopped) अदरक
5-6 no. Garlic cloves, roughly chopped, लहसुन
2 no. Green chillies (less spicy & roughly torn) हरी मिर्च
3 medium Onions, roughly diced, प्याज
1 large Tomato, roughly diced, टमाटर
Salt to taste, नमक स्वादअनुसार
10-12 no. soaked Cashew Nuts, भीगे हुए काजू
Prepared curd mixture, तैयार किया हुआ दही का मिश्रण
Water as required, पानी
Remaining butter, बचा हुआ मक्खन

For Chicken Marination
1 kg Chicken leg, cut into half, चिकन
Salt to taste, नमक स्वादअनुसार
1 tbsp dry Fenugreek leaves, कसूरी मेथी
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Oil, तेल

For Curd Mixture
2 cups Curd, beaten, दही
1 tsp Turmeric powder, हल्दी पाउडर
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Cumin powder, जीरा पाउडर
2 heaped tbsp Coriander powder, धनिया पाउडर

For Searing Chicken
2-3 heaped tbsp Butter, cubed, मक्खन
Marinated chicken, मैरीनेट किया हुआ चिकन

For Finishing Gravy
Seared chicken, भुना हुआ चिकन
Prepared gravy, तैयार की हुई ग्रेवी
1 cup Water, पानी
Prepared Tadka, तैयार किया हुआ तड़का
1 heaped tbsp Kewra water, केवड़ा जल
1 heaped tbsp Rose water, गुलाब जल
2 tbsp Coriander leaves, roughly chopped, धनिया पत्ता

For Tadka
1 tbsp Ghee, घी
1 large Onion, roughly diced, प्याज
4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
1 tbsp dry Fenugreek leaves, कसूरी मेथी
½ cup Water, पानी
Salt to taste, नमक स्वादअनुसार

For Garnish
Coriander sprig, धनिया पत्ता
Chilli oil, चिल्ली ऑइल

Process
For Gravy
● In a handi, add oil, ghee, once it’s hot, add green cardamom, bay leaf, cloves, cumin seeds, ginger, garlic, green chillies and saute it for a minute.
● Add onions and saute it for 4-5 minutes until onion is golden in colour.
● Add tomato, salt to taste, soaked cashewnuts, prepared curd mixture and cook the masala for another 7-8 minutes until it’s cooked well.
● Add water as required, remaining butter and let it simmer for a while.
● Transfer the mixture in a mixer grinder jar and grind it into a smooth paste.
● Keep it aside for further use.

For Chicken Marination
● In a bowl, add chicken, salt to taste, dry fenugreek leaves, degi red chili powder, ginger garlic paste, oil and give a good mix.
● Keep it aside to marinate it for a while.

For Curd Mixture
● In a bowl, add curd, turmeric powder, degi red chili powder, cumin powder, coriander powder and give it a good mix.
● Keep it aside for further use.

For Searing Chicken
● In a pan, add butter, once it melts, add marinated chicken and sear it on both sides for 4-5 minutes until half cooked.
● Transfer it to a bowl or tray and keep it aside for further use.

For Finishing Gravy
● In a handi, add seared chicken, prepared gravy, water and let it cook it for a while until it’s cooked well.
● Finish it with prepared tadka, kewra water, rose water, fresh coriander leaves and give it a good mix.
● Transfer it to a serving dish, garnish it with coriander sprig and chilli oil.
● Serve hot with roti or naan.

For Tadka
● In a pan, add ghee, once it’s hot, add onion, green chillies, tender coriander stems and saute it on high flames for a minute.
● Add dry fenugreek leaves, water, salt to taste and give it a quick boil.
● Keep it aside for further use.
