The Philippines’ is a very Catholic country, Filipinos generally avoid eating meat on Fridays and some even completely switch to a vegetarian or pescatarian diet during Lent and Easter starting on Ash Wednesday. Some like my maternal great grand mother even go further and fast for a full month during this time of year as part of their religious observance. Personally, this is not a hardship to me. I can happily live on fish and seafood alone. If there’s one thing I miss the most about home, it’s fresh fish and seafood.
