I have noticed there is difference in the properties of whole wheat flour/wholemeal flour for different brands
So the amount of water to be added will be slightly differ and the kneading time to achieve good gluten strength will also vary.
And if our dough is not showing enough gluten strength ,our bread will not rise well and so it will be denser in texture than regular white bread.

I tried the recipe except I used olive oil instead of butter and half honey and half molasses instead of just honey. I also used a stand mixer rather than by hand. In 15 minutes on low/medium speed my dough easily had enough gluten development. I’m impressed with how it came out. It’s flavor and texture is wonderful and it’s actually 100% whole grain which is quite rare. I was tired of store bought breads saying whole grain but being half white flour

This recipe is amazing. I made this today and one third of the loaf is already gone😅 It's very soft, moist and fluffy. I used olive oil instead of butter in the dough and it gave a nice subtle flavor which both me and my husband liked. I'll be definitely trying more of your recipes. All the best
