Steamed carrot cake
Ingredients:
Flour 1 cup
Baking Powder 1tbsp
Oil 1/2 cup
Carrot (grated) 1
Brown Sugar 3/4 cup
Eggs 2
Vanilla Essence 1tsp
Golden Syrup 1tbsp
Walnuts (chopped,toasted) 100gms
Ingredients For Lemon Cream
Mascarpone 250gms
Icing Sugar 1/2 cup
Lemon Zest (grated) 1tsp
Vanilla Essence 1/4tsp
METHOD
Grease four moulds or ovenproof dishes. Mix all ingredients, except nuts, with beaters for 2-3 minutes until well combined. Stir in nuts and divide among moulds. Cover each with a circle of buttered baking paper. Fold a single pleat (to allow for expansion) into 4 pieces of foil, then use to cover puddings tightly. Place in a roasting pan and fill pan with enough boiling water to come halfway up the sides of moulds. Bake at 180 degrees C for 35 minutes. Remove from pan and cool for 5 minutes.
Beat lemon cream ingredients until combined. Cover and chill until required. Turn puddings onto serving plates and top with a dollop of lemon cream. Drizzle with extra golden syrup and sprinkle with extra walnuts.

Mongolian Beef
Ingredients:
Beef Undercut Strips ½ kg
Cornflour 1/4 cup
Oil 1/4 cup
Fresh Ginger 2tsp
Garlic 1tbsp
Soy Sauce 1/3 cup
Water 1/3 cup
Dark Brown Sugar 1/2 cup
4 Spring Onions 4
Method
Mix steak strips with cornflour. Heat oil and stir fry the strips in it. Set aside and then add the ginger and garlic to the pan and sauté. Add the soya sauce, water and dark brown sugar to the pan and let it come to a boil. Add the steak back in and let the sauce thicken. Add the green onions, stir to combine.
