Chicken Cheese Puff Bites

Ingredients:

Puff Pastry 1/2 kg
Chicken Breast (finely chopped)1
Cheese 100 gms
Pizza Sauce 100gms
Thyme 1tsp
Finely Chopped Spring Onion 1 tbsp
Method
Cut the whole pastry sheet into 16 even squares. Cut the half sheet into 8 even squares.
Line mini muffin pans with pastry squares (the pastry edges will be higher than the muffin holes). Place in the freezer for 15 minutes to firm.
Bake the pastry at 220 degrees C for 10 minutes or until light golden and crisp. Use a spoon to gently press down on the pastry to flatten slightly. Fill each hole with a little of the chicken. Top with a piece of cheese and pizza sauce. Scatter with thyme . Bake at 20 degrees C for 5-7 minutes or until golden and the cheese has melted slightly. Sprinkle with chives .

Chocolate Bars

Ingredients For Cranberry Pistachio Chocolate

Dark Chocolate 400gms
Dark Chocolate (melted) 100gms
Cranberries(chopped ,dried ) 2 tbsp
Pistachios (chopped) 2 tbsp
Coconut Flakes 1-1/2 tbsp
Ingredients For Cookies and Cream Chocolate
Mini Dark Chocolate Cookies 10
Milk Chocolate 400gms
White Chocolate ( melted) 90gms
Ingredients For Mango & Ginger Chocolates
White Chocolate 350gms
White Chocolate (melted) 90gms
Sesame Seeds (toasted) 1tsp
Dried Mango (sliced) 50gms
Crystallised Ginger (sliced) 20gms

Ingredients For Fruit & Nut Chocolate

Dark Chocolate 400gms
Dark Chocolate (melted) 100gms
Dried Apricots (chopped) 4
Dried Figs (chopped) 2
Sultanas 1tbsp
Walnuts 8
Hazelnuts (chopped) 12
Almonds 10
Ingredients For Peanut Butter Crunch Chocolate
Milk Chocolate 400gms
Milk Chocolate (chopped) 100g
Peanut Butter 2tbsp
Pretzels (chopped) 12
Rice Bubbles 2 tbsp

Method
To make Cranberry Pistachio Chocolate, pour melted dark chocolate in the molds and top with cranberries, pistachio and coconut. Stand for 3 hours or until set. To make Cookies and Cream Chocolate, crush 1 packet of cookies. Place milk chocolate melted in molds and drizzle with melted white chocolate. Top with crushed and whole cookies. Stand for 3 hours or until set. To make Mango & Ginger Chocolate, place white chocolate melted in molds. Drizzle with white chocolate. Top with sesame seeds, mango and ginger. Stand for 3 hours or until set. To make Fruit and Nut Chocolate, put dark chocolate in molds. Drizzle with melted dark chocolate. Top with apricot, fig, sultanas and nuts. Stand for 3 hours or until set. To make Peanut Butter Crunch Chocolate, place milk chocolate in molds. Melt extra milk chocolate and peanut butter until smooth. Set aside to cool slightly. Spread over chocolate in mold. Top with pretzels, Rice Bubbles and stand for 3 hours or until set. To gift, wrap the blocks in baking paper and secure with ribbon.

Bread Pudding

Ingredients:
Milk 2 cups
Unsalted Butter 2 tbsp
Vanilla Essence 1tsp
Sugar ⅓ cup
Salt 1pinch
Sweet Bread (sliced) 6-9
Eggs (beaten) 2
Method
In a small saucepan over low heat, warm milk, butter, vanilla essence, sugar and salt. Cool. Fill a greased baking dish with with cubed bread. Add eggs to cooled milk mixture and whisk; pour mixture over bread. Bake at 180 degrees C for 30 to 45 minutes, or until custard is set but still a little wobbly and edges of bread have browned. Serve warm or at room temperature.
