Brian we assume you do not need oxygen absorbers with the avid armor, is that correct?
i have been tossing ideas around, especially when it comes to soups and stews to create your recipe with 75 percent less water. you would prepare this recipe with concentrated soup base instead of the broth. it might even be better to soften the meat without the vegetables (which could be blanched seperately) in the concentrate in an instant pot. that would ensure that the meat is pefectly softened and perfectly infused with seasoned flavor. the only requirements would be that the recipe would need to be seasoned normally for the fully reconstituted amount of product and the vegetables should not be cooked fully (al dente). this would keep the freeze drier from having to extract so much water. also, you could get 2 or 3 times the product on the trays. it wouldn't be palatable at first, but when the proper amount of water is added , it would all make sense and the taste should be the same, maybe better because the meat would soften in a concentrate which might make it more flavorful. you might even prepare each vegetable seperately so that each one could be cooked perfectly without over cooking, and then stored in large glass containers with a vacuum seal. then you could simply add the correct product amounts to the bags, like an assembly line, which could knock out many bags very quickly. maybe you could test that theory in your test kitchen. let us know

Dude I like you and like what you do. That said, and I say this as someone who's father and stepmother have been in television production their entire lives, you have got to stop yelling. I turn the sound off and close captions on when I watch your work. There appears to be no soft (sound absorptive) surfaces in your entire home. It sounds like you're recording in an airplane hanger even though you are mic'ed up, and it's even worse when you're talking over the pump. Consider doing narration over the video instead so that you can talk in a normal/inside voice. My two cents.
I have a Kitchenaid food processor that has an attachment that cubes your vegetables in the blink of an eye. I thought as many vegetables as you chop you might be interested. They also have manual choppers too. I make most of my soups and stew from scratch and I have used both kinds of choppers they are definitely time savers. Thanks for all you do to teach us about freeze drying I have learned so much from you.

It would be great if you could tell us what a portion weighs. Saying it’s a tenth of a tray really doesn’t help. I don’t use tray dividers and weigh my portions.
