French Onion Chicken Recipe

Ingredients:
• 1 whole chicken
• 2 large onions, thinly sliced
• 6 sprigs fresh thyme or 1 ½ tsp dried thyme leaves
• 2 tbsp Worcestershire sauce
• 3 ½ tsp kosher salt
• ½ tsp black pepper
• 1 packet French onion soup mix
• 3 cups chicken stock
• 3 garlic cloves, minced
• 1 tbsp olive oil
• For Gravy: 2 tbsp cornstarch + 3 tbsp water (mixed into a slurry)

Instructions:
1. Sear the Chicken (Optional):
• Heat olive oil in a large skillet over medium-high heat.
• Season chicken with half the salt and pepper.
• Sear 3–4 minutes per side until golden brown. Transfer to slow cooker or Dutch oven.
2. Add the Flavors:
• Scatter onions and garlic over chicken.
• Sprinkle with thyme, soup mix, Worcestershire sauce, and remaining salt and pepper.
• Pour in chicken stock.
3. Cook Until Fork-Tender:
• Slow Cooker: Low for 6–8 hrs.
• Oven: 325°F for 2 ½–3 ½ hrs (covered).
4. Shred and Remove Bones:
• Remove chicken, discard bones, shred meat, return to pot.
5. Make the Gravy:
• Switch slow cooker to high (or stovetop to medium).
• Stir in cornstarch slurry, cook 8–10 mins until thickened.
6. Serve:
• Spoon chicken and onion gravy over mashed potatoes, rice, or noodles.
