French Onion Soup in a Bread Bowl 🤎 @chef.souschef



This is a classic French onion soup recipe that is served in a bread bowl, which makes it the perfect addition to any dinner table, especially if you’re having guests. It is a comforting dish with a boat load of flavours.

Ingredients:
2 tbsp olive oil
⅓ cup unsalted butter
2 sweet onions, thinly sliced
2 red onions, thinly sliced
2 yellow onions, thinly sliced
1 tsp salt
¼ tsp sugar
2 tbsp flour
½ cup white wine
¼ cup sherry
4 cups beef stock
2 sprigs thyme
1 bay leaf
4 mini sourdough loaves or large buns
4 cups grated Swiss cheese

Directions:
1. Melt butter with olive oil over medium–low heat. Add all the onions and coat them in butter. Cover and cook 15 minutes.
2. Sprinkle onions with salt and sugar, increase the heat to medium, and cook 30 minutes, stirring often. Remove the lid and cook another 30 minutes until onions are rich and golden brown.
3. Stir in flour and cook 3–4 minutes. Pour in white wine and sherry. Bring to a gentle boil and reduce for 10 minutes. Season with salt and pepper.
4. Add beef stock, thyme, and bay leaf. Simmer on low for 1 hour. Remove thyme and bay leaf before serving.
5. Preheat the oven to broil. Cut the tops off the loaves and hollow out the centers, leaving a ½-inch wall.
6. Pour soup into each bread bowl, top generously with Swiss cheese, and broil until golden and bubbly. Let cool a few minutes, then dig in!
