Fried Chicken Biryani | ഫ്രൈഡ് ചിക്കൻ ബിരിയാണി
A kochi style delicacy made with fragrant basmati rice layered with mildly spiced fried chicken masala. Dum cooked with ghee, pineapple, fried onions, coriander leaves resulting in irresistible flavorful biriyani!

Ingredients
Chicken 1kg (4 whole leg, each cut into 3)
Ginger garlic 2 tsp
Salt 3/4 tsp
Turmeric powder 1/2 tsp
Curd 2 tbsp
Lime juice of 1 lime
Oil 1 tsp
For Rice
Oil/ ghee 3 tbsp
Cinnamon 3” piece
Cardamom5
Cloves 5
Bay leaf1
Mace 1
Basmati Rice 2 1/2 c (soaked)
Water 3 3/4 c
Lime juice of 1 lime
Salt to taste
For masala
For grinding;
Green chilli 6
Shallots 1/2 c
Mace 1/2
Shajeera 1 tsp
Fennel 1/2 tsp
Star anise 1/2
Pepper corns 1/2 tsp
Coriander powder 1 1/2 tsp
Turmeric powder 1/2 tsp
Nutmeg 1/2
Ginger garlic 1 tbsp each
Onion 500g fried
Oil 4 tbsp
Tomato 3 medium sized
Salt 1 tsp or to taste
Curd 4 tbsp
Coriander leaves a hand ful (30g)
Mint leaves few
Hot water 1/2 c
For Dum
Milk 1/2 c
Turmeric powder 1 pinch
Garam masala 1/4 tsp
Oil/ Ghee 1 tbsp
For garnish
Fried onions
Pineapple pieces
Fried nuts and raisins
Coriander leaves/mint
