Gajar halwa
Recipe in English:

Ingredients:
-Carrots 2 kg (grated)
-Milk (boiled) 2 kg
-Sugar 1 & ½ cup or to taste
-Khoya ½ cup
-Ghee (desi) ½ cup or as required
-Nutmeg powder 1 tsp
-Cardamom powder 2 tsp
-Dry fruits/nuts as required

Directions:
-Rinse, peel and grate carrots.
-In a pot,add carrots and heat up on high flame for 2-3 minutes.
-Add milk (boiled) and bring the whole mixture to a boil then mix it.
-On a medium low flame, uncovered, grated carrots will cook in the milk and the milk starts to reduce and evaporate.
-Now cook on high flame and keep on stirring in between.
-When all milk evaporates, add sugar and give it a good mix.
-Keep stirring and continue to cook on a high flame.
-Add khoya,ghee and mix well.
-Towards the end,add cardamom powder,nutmeg powder and dry fruits/nuts and give it a good mix.
-Cover and put it on simmer for 2-3 minutes.
-Gajar halwa is ready.

Recipe in Urdu:

Ingredients:
-Gajar 2 kg (grated)
-Doodh (boiled) 2 kg
-Cheeni 1 & ½ cup or to taste
-Khoya ½ cup
-Ghee (desi) ½ cup ya hasb e zaroorat
-Jaifal powder 1 tsp
-Elaichi powder 2 tsp
-Dry fruits/nuts as required

Directions:
-Gajar ko dho ker cheel lein aur kadukash ker lein.
-Pot mein gajar dal ker tez ancch per 2-3 minutes kliya paka lein.
-Doodh (boiled) dal ker puray mixture ko ubal lein.
-Halki darmiyani ancch per,baghair dhakay gajaron ko doodh mein paka lein aur doodh ko khuskh ker lein.
-Ab tez annch per paka lein aur chamcha chalatay rahein.
-Jab doodh mukamal khuskh ho jaye toh cheeni shamil karein aur ache tarhan mix ker lein.
-Chamcha chalatay hoye tez ancch per paka lein.
-Khoya,ghee dal ker mix ker lein.
-Akhir mein elaichi powder,jaifal powder aur dry fruits/nuts dal ker ache tarhan mix ker lein.
-Dhak ker 2-3 minutes kliya dum per rakh dein.
-Gajar halwa tayyar hai.
