Garlic Butter Chicken Bites Ingredients
• 300 g boneless skinless chicken, cut into 1-inch cubes
• 1/2 tsp salt
• 1/2 tsp pepper
• 1 tsp oil
• 1 tsp corn flour/cornstarch

To pan-fry garlic butter chicken
• 2 tsp oil
• 1 tsp butter

To make garlic butter sauce
• 1 tsp oil
• 2 tsp butter
• 1 tbsp chopped garlic.
• 1 tsp red pepper flakes/red chili flakes
• 1 tsp Italian seasoning
• Corn flour/cornstarch slurry – 1 tsp corn flour/cornstarch mixed in 2 tbsp water
• 1/2 tsp smoked paprika (optional)
• 1 tsp lemon juice
• 1 tbsp coriander leaves

Method:
1. Season chicken with salt, pepper, and oil. Sprinkle corn flour on top and coat with chicken pieces.
2. Heat oil and butter on medium heat. Add chicken. Cook until golden on one side. Flip and cook until the chicken is cooked. Do not overcook the chicken. Remove it to a plate.
3. Heat oil and butter in a pan. Add garlic and sauté until light golden. Add red pepper flakes and Italian seasoning. Cook for a minute, being careful not to burn.
4. Add 2 tbsp water. Stir to deglaze the pan. Add cornstarch slurry. Cook until it thickens
5. Lower the heat. Add chicken back to the pan. Coat it with the sauce. Taste the sauce and adjust the seasoning. Add lemon juice and coriander leaves.
6. Serve with noodles or fried rice.
