THIS IS IT! This is what I had in Germany that was so good. Made by 2 high school students. It was the best spaghetti I ever had. I thought they were being frugal by not putting sauce on it but it wasn't the case. It didn't need it. The garlic and oil was all that was needed. Flavorful, light, satisfying. I never forgot it. That was 25 years ago.
I love how it's called "Garlic and Oil" but it's really "Garlic, Oil, Parmesan, Parsley, and seasonings." No Parmesan, no deal.

Wth, that’s not how it’s done. The pasta should have been put into the frying pan when it was still very al dente. Then fry it a bit adding salted pasta water until al dente as desired. Watch Lydia Bostianich for the right way to make this. Plus No Salt! The water is salted prior to putting the pasta in to boil. So it flavors they pasta as it cooks. I love chef John but being Italian n watching this, he blew this one. Most likely this was very oily!

I don't think I've ever seen a Chef John video this old! Amazing to see how far everything has come on in terms of production (though the laryngitis was obviously cramping Chef John's style). Still a classic though.
