MONDAY
GENERAL TSO’S CHICKEN
Ingredients
Boneless chicken julienne ½ kg
Salt ¼ tsp
Black pepper ¼ tsp
Oil 2 tbsp
Corn flour 1 tbsp
• Marinate chicken with all the above for 10 mins.
Other Ingredients
Oil ¼ cup
Ginger julienne 1 tbsp
Spring onion 2 cut into long 1 inch pcs
Sesame seeds 1 tbsp
Honey 3 tbsp
Crushed garlic 1 tbsp
Lemon juice 2 tbsp
Dark soya sauce 1 tbsp
Chicken powder 1 tsp
Corn flour 1 tbsp mixed with 1 cup water
METHOD
Heat oil, add crushed garlic, ginger julienne, marinated chicken, fry for 5 mins, add 1 ½ cup water with spring onion, sesame seeds, sauces, seasonings, when water boiling thicken with corn flour paste, serve with rice.
CHICKEN FRIED RICE
Ingredients
Chicken 1 breast marinate with;
Black pepper and salt ¼ tsp each
Oil 2 tbsp
Corn flour 1 tsp
Carrot 1 small cut into fine julienne
Spring onion leaves 1 cup finely chopped
Boiled rice ½ kg
Oil ¼ cup
Eggs 2 beaten
Salt 1 tsp
Black pepper ½ tsp
Chicken powder 1 tsp
Sugar 1 tsp
Soya sauce 1 tbsp
METHOD
Heat oil, add beaten eggs, let them settle for 2 mins, add chicken, fry for 5 mins, add half qty of chopped veggies, mix, add boiled rice with seasonings. Lastly fold in remaining veggies, mix and remove.
KINDO BEEF
Ingredients
Undercut thinly sliced ½ kg marinate with;
Oil ¼ cup
Salt ½ tsp
Black pepper ½ tsp
Corn flour 2 tbsp
Egg 1
• Mix well and deep fry for 5 mins till done
Other Ingredients
Onion 1 medium sliced
Carrot 1 small cut into thin julienne
Spring onion 2 leaves only cut into 1 inch pcs
Corn flour 1 tbsp dissolved in ¼ cup water
Salt ½ tsp
Chili oil 2 tbsp
Oil 1 tbsp
Chopped garlic 1 tbsp
Water ½ cup
Ketchup 1 cup
Lemon juice 2 tbsp
Chicken powder 1 tbsp
Sesame seeds 1 tbsp
METHOD
Heat 2 tbsp chili oil and 1 tbsp plain oil, add chopped garlic, fry, add ½ cup water with ketchup, lemon juice, chicken powder, add all the veggies with 1 tbsp sesame seeds and ½ cup water, salt, fried beef, lastly thicken gravy with corn flour paste.
