Best potato salad, its my go to for picnics and potlucks

I use some bacon and use the grease from the bacon..its a yum
Throw the eggs into the same pot as the potatoes and boil everything together! Real time saver.

This is the first potato salad I made that did not get watery the next day. I LOVE COOK COUNTRY and this potato salad was easy to make. I used dill and sweet relish but drain any extra liquid out. This is my go to potato salad from now on. Just have to find a way to not use do many dishes but it is worth it.

I love potato salad so much! I know it’s not good for you but it’s so yummy. I grew up using red bell pepper instead of Celery And we always smashed half of the potatoes to basically mashed potatoes and then add it with some chunks so then there was differences in texture. So good
AUNT MAUDES POTATO SALAD
3 LBS RED POTATOES, BOILED W SKIN, COOLED, PEELED & DICED
1 TBSP CHOPPED ONION
3 STALKS CELERY, CHOPPED
¼ TSP CELERY SEED
DRESSING:
1&1/4 C SUGAR
¾ C VINEGAR
¼ TSP SALT
¼ C FLOUR-LESS 2 TSPS.
.½ C WATER
3 EGG, BEATEN
3 EGGS, HARD BOILED
MIX SUGAR AND FLOUR IN SAUCEPAN. ADD REST OF INGREDIENTS AND COOK OVER MEDIUM HEAT UNTIL THICK. MAY ADD A LITTLE MILK IF TOO THICK. ADD TO POTATO MIXTURE AND ADD HARD BOILED EGGS AND STIR. MAY ADD ANOTHER HARD BOILED EGG, SLICED TO TOP FOR GARNISH.
I have no idea where they get these so called "Southern" recipes. I lived in central MS for 50 years and most of these recipes are completely foreign to me.
I'd prefer a waxy spud, like a red. I don't get the water, or the yellow mustard, and definitely not the sweet pickles. I like most of the recipes on this channel, but this one is not for me.
Why the vinegar at the beginning ?
To preserve nutrients & flavor, boil the water first & then add the potatoes to begin the boiling.
