Welcome to Bonita’s Kitchen! Today we will be making GLAZED PORK ROAST. I’m cooking a small pork tenderloin roast over a bed of onion rings, then top with a tasty homemade glaze you will love. Recipe posted below!!

Ingredients:
1 Pork loin roast 1 tsp sea salt
1 tsp black pepper 1 tsp onion powder
2 sticks of celery, diced 1 large onion, sliced
2 tbsp brown sugar or honey 2 tbsp cornstarch
2 tbsp butter or margarine 1½ cup vegetable broth, more if needed
½ tsp dry mustard or mustard 2 tbsp lemon juice
1 tsp fresh, ground or dried rosemary

Method:
First remove packaging from the pork roast and rinse under cold water tap to remove any blood.

Peel and cut in slices a large onion of choice place in a roasting pan. Then in a frying pan drizzle with oil and butter, put the pork roast in the pan and season with half of the sea salt, pepper and onion powder on all sides.
Fry a few minutes on each side to brown, then put on top of the onions in roaster.

Add ½ cup of vegetable broth to bottom of roasting pan, leave roast uncovered to bake, toss a couple of sticks of rosemary in pan.

After using the same frying pan, add celery and butter cook until softened, then add the remaining of your seasoning, like sea salt, pepper, onion powder and rosemary. Cooking it on a medium stovetop heat.

Add in a separate bowl, vegetable broth, cornstarch, dry mustard and brown sugar, mix together and pour into the frying pan with other ingredient;s mix until it starts to thicken.
After, pour into the sauce your lemon juice and continue mixing. Lower the heat and add more vegetable broth if needed or to make more sauce.

Preheating the oven to 350ºf then cook the roast until the internal temperature is 160ºf or 25 to 30 minutes per pound of roast.

The last thirty minutes of cooking your roast glaze the roast with your sauce and keep half for pouring over each serving of pork when cooked and ready to serve. Remember you can add more vegetable broth to make more sauce.
Bonita’s Tips:.
Brushing the glaze over the roast a couple of times during the baking stage will lock in that amazing flavour and juice.
Use brown sugar or honey to sweeten.
Serve with side of choice.
