Gochujang Airfried Chicken – Dinner in Under 45 Minutes

I love quick and easy meals, and this dish is the perfect way to whip up something delicious and nutritious in around 45 minutes. Feel free to add more veggies, the broccoli here is a small portion for two. If you’re cooking for more people, I recommend using a larger head or bag of broccoli.

NGREDIENTS

Gochujang Chicken
– 9 chicken pieces (1 tray)
– 2 tbsp gochujang paste (from Woolies)
– 1–2 diced red chillies
– 1 heaped tsp diced garlic
– 1 tbsp red wine vinegar (optional)
– 1 tbsp soy sauce
– 1 tbsp oyster sauce
– 4 tbsp oil
– Salt and pepper
– 1 tbsp honey (melted)
– Fresh coriander

Egg Fried Rice
– 2 cups cooked basmati rice (day old rice works best)
– 1 beaten egg
– Salt
– 2 tbsp diced spring onions
– 1 tbsp soy sauce
– 1 tbsp oyster sauce

Garlic Broccoli
– 1 tsp diced garlic
– Sesame oil
– 65g tenderstem broccoli

METHOD
1. Gochujang Chicken:
– Mix the gochujang paste with all the ingredients except honey, salt, and pepper.
– Marinate the chicken for as long as possible. Place in the air fryer, season with salt and pepper, and cook at 180°C for 20 minutes.
– Add melted honey to the remaining marinade, baste the chicken, and air fry for an additional 10 minutes at 180°C. Garnish with fresh coriander.

2. Garlic Broccoli:
– Sauté the broccoli in sesame oil with garlic until tender.

3. Egg Fried Rice:
– Scramble the beaten egg in a pan and set aside.
– Add the cooked rice to the same pan, toss with scrambled egg, soy sauce, oyster sauce, and salt.
– Stir in half the spring onions and fry on medium heat until the rice is heated through and slightly crispy.

Plate it all up however you like, I love adding onion chilli oil for extra flavour. Enjoy!
