Don’t want to fry them? No problem, brush each empanada with olive oil and bake for 20-22 minutes at 400 degrees
Ingredients: 20-22 empanadas
Ground Beef Stuffing:
2 lbs lean ground beef
1 red bell peppers (chopped)
1 green bell pepper (chopped)
1 small onion (chopped)
4 minced garlic cloves
2 tsp Mexican oregano
2 tsp thyme
2 tsp parsley
2 tsp basil
2 tsp paprika or chili powder
1-2 tsp crushed red pepper
1 tsp garlic powder
1 tsp black pepper
Salt I’m using 2 tsp
🧀 your favorite melting cheese, I’m using medium cheddar, Monterey Jack and Oaxaca cheese
Empanada dough
3 3/4 c AP flour
12 tbsp cold butter
1 tbsp sugar
Salt I’m using 1 1/2 tsp
About 1 1/4 iced old water
1 serving of love 💕

Gorgeous and delicious, and the food looks fantastic, too. I'm just trying to figure a way to cheap out and save time preparing this dish. I do not have a lot of extra time to spend cooking, but I like to make the good stuff anyway. I wonder if I could buy some kind of store bought dough and get back some extra time. The trouble there is that all kinds of store bought dough are borderline edible.

Thise look absolutely delicious! But…being a man, I take the easy way out, and use puff pastry sheets from the grocery store, and bake them with an egg wash.

I live in Thailand, so a lot of Mexican spices aren’t here. This recipe looks like I can get everything here. Definitely going to try this. I’m slowly introducing my wife to Mexican food. 😂
