IMANA’s excited to share this three-part virtual series – Food Cultures of the World with you. Starting Nov. 21, for the next three Saturdays, we’re making a conscious effort to raise awareness about the struggles of those in Sudan, Syria, Palestine and preserve their traditions and cultures. Food is the single greatest unifier in cultures; what better way to learn and explore each country’s unique cuisine through live meal preparation and discussing why these places and people matter to us.

Get ready to dig out your pots and pans, and join in this meal preparation by Chef Nick Klopp as he makes a traditional Sudanese meal – Gorassa be dama (beef stew with flatbread).
Serves 6 | Prep 15 min | Cook 45 min | Ready in 1 hour
🇸🇩Gorassa be Dama🇸🇩
FLATBREAD
• 3 cups whole wheat flour (sifted)
• 1/2 tsp baking powder
• 4 cups water
• 1 tsp kosher salt
STEW
• 3 yellow onions (diced)
• 6 oz tomato paste
• 6 garlic cloves (minced)
• 1 pound flat iron steak
• 5 small vine tomatoes
• 1 medium green bell pepper (seeded/diced)
• 3 serrano peppers
• Salt/pepper (to taste)
• 1 tbsp cardamom
• 1 tbsp cinnamon
• 3 cups water
• Olive oil
