I do like his food yet I dislike his way of teaching. He’s always in a hurry like fast is king. He’s not in a restaurant right now. He’s in his home and it should show love and him enjoying cooking not competing who finishes first. Take your time and show some enjoyment while cooking.

Researching as I have purchased half of a pig, it's the best pork I've ever had in my life. 0:48 never seen a chef drain into the stove beside the burner like that. Is that a special stove or is it just a catch pan that gets cleaned a lot? Thanks, I do spend some time around the grills repairing other things.

From this video I learnt to put the pork in a "hot" pan for 4 seconds on the first side, 8 seconds to cook the fat and 14 seconds for the final side while basting.
The wife wasn't happy when I drained the pork fat all over the cooker top.
