You can make a gourmet chashu (Japanese braised pork belly) from Tokyo ramen shops using everyday appliances!
Ingredients:
1 thick & long pork belly (1.2 lbs used in video)
1 bundle negi (the green part)
2 – 3 garlic
2 large blocks ginger
1/2 onion
100 ml mirin & sake
250 ml soy sauce
30g sugar
1. Add shallow cuts to pork belly, tenderize both sides, tightly roll it up starting from thinner side, secure with cooking twine.
2. Add into pot along with water, bring to boil, empty it out & rinse with water.
3. Break apart & add green part of negi, peeled & sliced blocks of ginger, garlic cloves sliced in half.
4. Bring to boil, place paper napkin, simmer for 1.5 hours. Flip occasionally.
5. Take out pork, take out 500ml of broth, empty out the rest.
6. Add & boil sake & mirin, then add broth, soy sauce, sugar. Mix it up.
7. Add pork along with torn up onion peels, garlic cloves sliced in half, 500ml water. Bring to boil, cover with paper napkin, simmer for 40 minutes.
8. Take it out, filter the sauce (can be used for other recipes).
9. Lightly sear the pork, heat up the sauce, glaze the pork. Cut it up, enjoy!
