5 slices, young or old ginger
50g (1.76 oz) rock sugar
Some hot water, enough to cover the pork
3 cloves garlic, lightly smashed with the skin on
6 tbsps light soy sauce
1 tbsp premium dark soy sauce
Some cornstarch solution (optional)

This looked so delicious I will make some. I never seen the rock sugar before Thankyou for sharing
Tips for improvement:
Ginger can be added earlier tgt with the pork to rls the ginger aroma and also to take away any odour
Sugar itself will caramelise and hence u do not need to thicken with starch solution, just need to let the sauce evaporate abit more
This recipe is good only for 1 person 😂. I will double it and braise it for longer. Prefer the melt in your mouth fats. Yums 😋😋.
