INGREDIENTS
For the marinade
8 cloves garlic
3/4 cup (180ml) olive oil
1/2 cup (120ml) lemon juice
2 teaspoons Dijon mustard
1 tablespoon honey
1 tablespoon Greek dried oregano
1 teaspoon dried thyme
2 teaspoons fine sea salt
1 teaspoon black pepper
Remaining ingredients
8 large chicken thighs – overlapping skin trimmed
5 medium Yukon Gold potatoes – peeled, cut into large chunks, and soaked in water then dried
1 sprig fresh oregano – optional, for garnish
5 slices lemon – optional, for garnish

  1. This looks great, and EZ! I make something similar. I grill the marinated chicken (and some lemon slices & sprigs of Rosemary for garnish) on the BBQ & baste with some of the marinade (set aside before adding the chicken). We like this served with Rice Pilaf and grilled veggies of choice. Asparagus, marinated artichokes hearts, shallots, cherry tomatoes, mushrooms, zucchini, yellow squash, sweet red pepper slices are all good. Pop open a bottle of wine and Bob's your uncle, as they say. 😋

  2. If you cover everything with a piece of parchment paper and then aluminum foil (you dont want aluminum to be in touch with the acidity of the lemon as it turns poisonous) the potatoes will cook better, the last 10 minutes remover the cover so they can br9wn a bit. The cover trapa the steam and softens everytihng a lot better
