That flap of skin you called the cape (not the wing bone) that you took off is my absolute favorite part. When it’s cooked right, it crisps up and really makes the wing even crispier.

I leave the tip on the flat and cut the drum into 2 pieces. There is deliciousness on that tip. I also don’t cut any skin off, also deliciousness

1st thing I see is lighter fluid ~ and we're moving on, and we're walking. Even rookies on the grill know this is a no no right out of the gate. > Wrong / Use natural lump charcoal and never , ever use lighter fluid. <smh>

Me too, I cut the tips and flap off too. I don't put any spices on before cooking though. I like to start them plain and then add a few spices after they've been flipped once. Add a little more after the second flip. If you put the spice on too early it will turn black and taste burnt.
Why not try it for the camera???
I hate those recipes when instead of describing the principles of tastes matching they just tell you: ”go and get those spices mix from Dr. SuperDuper”
Currently making some wings and drums, and beer in hand. I think I use to much charcoal on a tiny Webber grill.

You wanna make sure your BBQ Temp is 300F or above when cooking Wings. Otherwise you end up with a Rubber Wing. Not cool if you spent all that time trimming and putting a Rub on. I usually cook my wings at 375F for 40-45min
I followed this recipe (except I used the two side baskets). Used the JoJo Rub and some hickory chunks for smoke and the wings came out awesome! Thanks for sharing your knowledge!
