Good recipe, but it's not jerk if you're not smoking it ;P Lower the heat, add smoke chips (wood) to the grill and give it time to absorb the smoke.

Chef John habanero have no flavour. Jerk requires SCOTS BONNET, THYME, ALLSPICE- everything else is superfluous. BTW PORK is the ORIGINAL jerk. Maroons on the move in the mountains would season and preserve wild pig meat over low smoke fires using pimento (allspice) wood branches.
How do you separate the thyme leaves from the stem? I know you have an awesome technique for that!

Lol. Habañero is pathetically weak when it comes to spicy. If you want the good stuff, I use a salsa I purchased made with (and including the seeds of) ghost peppers, Trinidad Scorpion peppers, and Moruga peppers. 😀

Habanero peppers and Scotch bonnets peppers aren't basically the same thing. It Is a decent substitute because it is equally as hot but it is like comparing a Thai chilli/Bird's eye chilli to a Serrano pepper to different flavors.
