• Pork shoulder or belly: 800g (choose a cut with some fat for juiciness)
• Lemongrass, minced: 2 stalks
• Garlic, minced: 4 cloves
• Shallots, minced: 3
• Oyster sauce: 2 tbsp
• Fish sauce: 2 tbsp
• Soy sauce: 1 tbsp
• Brown sugar or honey: 2 tbsp
• Annatto oil (or regular oil): 1 tbsp
• Ground pepper: 1/2 tsp
• Five-spice powder: 1/3 tsp (optional)
