**白菜豆腐Napa cabbage and vermicelli**

Ingredients
– Napa cabbage
– Glass Noodle (thick)
– Scallion + Garlic
– Soy Sauce
– Optional:
– Soft Tofu
– Lean pork
– Spinach

Recipe
1. Soak the glass noodle in water for 10mins
2. Cook scallions and garlic in hot oil to infuse the flavor
3. Saute meat of your choice and add the napa cabbage (it will look like a lot but most of it is water, so the volume will shrink after a few minutes)
4. Pour in soy sauce (and sesame oil if you like)
5. Add the soaked glass noodles, spinach, and tofu
6. Braise covered for 2 to 3 minutes
