I dont know about American bakeries but here in Australia we only use fresh yeast, it is so much better.

That’s not Detroit pizza, that’s cheese bread with the marinara dip slathered on because they ran out of dip cups! Not yummy, not buy it by the slice or by the pie that I’ve known my whole life! The sauce goes under the cheese and then you bake it.
