love garlic pork – been eating it every christmas since i was about 10 years old. As she said its a Guyanese tradition. My mum made it every year. unfortunately i lost my mum this year unexpectedly so never had the opportunity to clarify the recipie with her, so i thought i should take up the mantle and make it this christmas for my daughter who loves it.

Looks good. Your pork is already cured by the vinegar so you don't need to worry about how well cooked it is.
