Authentic Haitian cuisine don't use Cilantro nor boullion cubes nor water in epis. The meat doesn't need to be cut so small because it will shrink after boiling process. Washing pork with sour orange is a must, lemon ok. Finishing touch needs red and green peppers with onion and pickliz. Your version is not bad but not authentic sir.

Nope, you gotta clean your meat. I am a classically trained chef and use to get yelled at by my chef instructors when I was in culinary school, because I would clean my meat with some form of acid.
