Banana bread ingredients;

– 113g butter (to be browned)
– 3 small ripe bananas* (270g)
– 190g brown sugar
– 240g yogurt
– 2 eggs, at room temperature**
– 1tsp (5ml) vanilla extract
– 335g all-purpose flour
– 1 tsp (6g) baking soda
– 1/2 tsp (2g) baking powder
– 1/2 tsp (4g) salt

Bake at 175C/350F for 55mins to 1 hour 5 mins.

*if you don’t have ripe bananas, try baking whole bananas in the oven at 180C for 10 minutes
**for an egg-free version, substitute with 88ml/6 tbsp of aquafaba (canned chickpea water)
