I think the real reason the US doesn’t convert to metric is, imagine how many speed limit signs that’ll have to be switched?!😂
Is there a reference chart for dry ingredient weight? (I see one for Cook's Illustrated, but only covers a few – other charts are slightly different, so I prefer the ATK advice)
I use very small measurements all the time. Some ingredients are very powerful so if you overdo it you can end up making things worse. Turmeric is a good example. Its very strong in color and flavor so you really only need 1/8th teaspoon or less for most things its added too. Curry would be an exception of course because turmeric is one of the main ingredients in curry.
What is the relationship ounces, used to measure weight, and ounces, used to measure volume?

For sticky ingredients, they make 2 Tbsp adjustable measuring cups. They're perfect for honey and peanut butter. Something like this: http://a.co/d/03wo09e
I also have that new OXO scale, and the only thing I don't like is that it only has 1 digit of precision in ounces mode. So measuring things like 6 and 3/4 oz is really annoying because you can only see 6.7 and 6.8 oz. When baking, that tends to matter.
I can not handle the fact that your book is entitled “the SCIENCE of good cooking” and your measurements are in cups !!! It makes no sense !

I worked at Panera for several years and the headache of dual/conversion measurements was constant.
Grams, kilograms, liters and milliliters is a much superior method to the chaotic imperial or blended system. imho
I always use the tare method for scaling measurements as well.
I love watching you talk about cooking and the products you all use in the test kitchen. When getting ready to cook I have problems with the measurements when trying to measure some things in ounces and having to use the metric measurements some authors use when making the recipes.
What great information and so helpful when making cakes and bread as I have the need for a special diet I have to make my own bread & cakes also my own cookies

Sorry, not going to change to the Metrics system, not going to happen
Weighing is great but SO many recipes use volume measures.
The change to using Metric is already well on it's way… it won't be a change in legislation or something that's government driven to make the complete switch though – instead it will be people and culture driven. So if you want to see a switch to metric, use metric – it's that simple. No one will be offended or butt hurt, and you won't lose viewership over it – every measuring device does both anyway.
If you are weighing flour (or similar) how much can humidly impact the weight vers volume? I know this can have a huge impact when making bread…

OXO makes great stuff. All sorts of other kitchen toys also.
A bonus to weighing ingredients instead of measuring volume is you won't have to dirty-up extra measuring devices. You can place a mixing bowl on the scale and tare-out the scale between adding ingredients.
