This makes about 8 bites:
1 cup frozen raspberries (240 ml / 130 g)
3/4 cup shredded coconut (180 ml)
1 – 2 tablespoons maple syrup or honey, to taste

Topping:
3 oz. / 80 g 80% dark chocolate
optional: 1 teaspoon coconut oil

1. Put the raspberries, shredded coconut and maple syrup into a blender or food processor and mix until combined
2. Spoon dollops onto a plate lined with parchment paprt
3. Let set in the freezer for 1.5 – 2 hours
4. Melt the chocolate in the microwave (with the coconut oil). Dip the bites in the chocolate and enjoy!
5. Store in the fridge or you can also store them in the freezer in an air-tight container, let defrost for about 10 minutes before serving

These look yummy Selma , I can’t wait to try them and I love all berries including raspberries and shredded coconut they’re delicious and with dark chocolate just up my alley and everyone needs a treat now and then it’s important not to always deny yourself treats especially those that are homemade and healthy !
