Ingredients:β¨βοΈ
Poha (flattened rice) β 1 cup
Suji (semolina) β 1 cup
Dahi (curd) β Β½ cup
Water β 1 cup (plus more as needed)
Salt β to taste
Sugar β 1 tsp
Baking soda β Β½ tsp
Chopped vegetables (carrot, beans, green peas, capsicum, ginger and green chilli) β as desired
Ghee β for cooking

Instructions:
1. Soak & Blend:
Rinse the poha thoroughly and soak for 10 minutes.
In a blender, add soaked poha, suji, dahi, and 1 cup water.
Blend into a smooth batter. Add more water if needed to reach a pourable consistency.
2. Rest:
Let the batter rest for 15 minutes.
3. Mix:
After resting, add salt, sugar, baking soda, ginger-green chilli and chopped vegetables. Mix well.
4. Cook:
Heat a non-stick pan and grease it lightly with ghee.
Pour 2 ladlefuls of batter and spread it gently like a thick paratha.
Cover and cook on low heat for 2-3 minutes until the bottom is golden.
Flip and cook the other side for another 2 minutes.
5. Serve:
Serve hot with your favorite chutney or ketchup.
