How to make Healthy & Easy Oat Bread that is high-fiber & gluten-free! This bread recipe is a great source of omega 3s and fiber from the flaxseeds. The bread also contains about 10 g protein per slice (you get about 7 thick slices from this bread). I added sunflower seeds to this bread but you could use your favorite seeds in this.
Psyllium husk powder gives this bread the elasticity it needs, so even though it seems like such a small amount of an ingredient, it’s a crucial part in making soft and delicious gluten-free bread🤩
Ingredients:
1 1/2 cups warm water (360 ml)
4 teaspoons of dry yeast (11g)
3 tablespoons olive oil
1 tablespoon maple syrup or honey
1 1/2 teaspoons salt
1 tablespoon psyllium husk powder
1 cup (gluten-free) oat flour (240 ml)
1 cup (gluten-free) oats (240 ml)
1/3 cup ground flaxseeds (80 ml)
1/2 cup sunflower seeds (120 ml)
For topping: 2 tablespoons sunflower seeds
1. Heat the water in the microwave until its about 42 degrees in Celsius / 107 in Fahrenheit (check the yeast package which temperature it recommends)
2. Add the yeast and stir until it’s dissolved
3. Add the olive oil, maple syrup and salt and stir.
4. In another bowl mix the oat flour and psyllium husk powder together.
5. Pour the flour into the bowl with the wet ingredients. Add the oats and ground flaxseeds
6. Mix with a hand mixer with dough hooks for about three minutes.
7. Fold in the sunflower seeds
8. Pour into a loaf pan lined with parchment paper. Sprinkle the sunflower seeds on top.
9. Let rise uncovered for 35-45 minutes
10. Bake at 200 Celsius degrees (390 in Fahrenheit) for about 40-45 minutes

Can we not use the psyllium husk powder???
adding oil and flaxseed and sunflower seeds add a huge amt of calories to this loaf, it will come out fine without those items.
My IBS has really improved since I started using your recipes and food prep. I also take probiotics and digestive enzymes and I feel a million times better, thank you❤❤❤

Can I use pumpkin seed instead of sunflower seeds?
I just made it and it came out GREAT. I followed the instructions to the letter, except that at the end I added two large spoons of oat flour to the dough, because it looked a bit too sticky/runny in comparison with how it looked on the video. Maybe next time I'll use 1 + 1/3 cups oat flour instead of one cup. Best oat bread recipe so far, thank you so much. I tried several other recipes before from other channels and it had not worked well.
