Lentil Flatbread

INGREDIENTS
1 cup red lentils
2 cups water
¼ tsp salt or to taste
INSTRUCTIONS
In a bowl, add washed and drained red lentils, water, and salt. Allow to soak for 2+ hours.
Add the contents of the bowl to a high-speed blender and blend until smooth.
Heat well-seasoned cast iron pan on medium-low. Pour batter into the center of the pan. When bubbles appear and the top is dry, flip to cook the other side. Cook for an additional minute or so and remove from the pan.
Enjoy!

I made this without soaking the red lentils and it was gross… 🤔I wonder if soaking would make a difference in taste…
This looks really good! I want to try this today! But I don't have red lentils on hand, just dark green ones. Can they be substituted?
These are great. I've made them the same way with quinoa too. Non stick pan is key.

After doing the first step,once blended the mixture can be left to settle overnight at (least 12 hrs) it begins to bubble up & ferment similar to sour dough,& also much easier to digest.(some recipes in Indian cuisine do this with lentils & also with rice) "dosa"..
