Ingredients:
1 (5-7 pound) pork shoulder
1/4 cup brown sugar
2 tablespoons paprika
2 tablespoons garlic powder
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 cups hickory wood chips, soaked in water
Instructions:
1. Preheat your smoker to 225°F.
2. In a small bowl, mix together the brown sugar, paprika, garlic powder, salt, black pepper, and cayenne pepper. Rub the mixture all over the pork shoulder.
3. Place the pork shoulder in the smoker, fat side up. Place the soaked wood chips in the smoker.
4. Smoke the pork for 8-10 hours, until the internal temperature reaches 195°F.
5. Remove the pork from the smoker and let it rest for 10 minutes.
6. Pull the pork apart into shreds with two forks.
