Sneaky veggie pasta. 🍝πŸ₯¦ You can essentially turn any veggie into a creamy, savory pasta sauce by blending it with some cashew cream. Stir it into sautΓ©ed onions and garlic, add a splash of pasta water, and some vegan parm (or nutritional yeast).

Probably 90% of what I cook is just improvisation! I don’t measure anything; I just taste and adjust as I go. πŸ‘©β€πŸ³ This is something I made up on the fly because I had some leftover cashew cream and some kale that was starting to wilt. Pasta is a go-to for us when we have random veggies to use up.

I used steamed kale, but this is totally flexible β€” think roasted 🌢 red peppers, cauliflower or πŸŽƒ pumpkin, or even some sautΓ©ed πŸ„ wild mushrooms if you’re feeling fancy. Add some extra herbs or spices if you like. Toss in a chick’n style bouillon cube to make it more savory (one of my fave hacks).
