Ingredients:
1/2 small onion, finely diced
1/2 small red pepper, finely diced
125g lean beef mince
1 1/2 tsp bbq seasoning
1/2 beef stock cube
Salt & pepper
2 heaped tbsp passata or salsa
2 mini tortilla wraps
30g shredded mozzarella
1 heaped tbsp bbq sauce
Cooking Directions:
Fry the onions and peppers for a few mins in oil spray to soften. Add the beef mince, bbq seasoning, salt & pepper, passata then crumble over the stock cube. Mix well and fry for a further few minutes until the beef is cooked.
Cover one side of a mini tortilla wrap with the sauce mixture, spray a pan with oil then place the tortilla wrap sauce side down. Add the beef mixture along with the cheese, place a mini wrap on top and spray with oil. Fry for a few mins each side, drizzle with bbq sauce.
