  1. I make something similar for years now. Except I prefer sweet potatoes over regular ones, always tasted better. If you have the time and want them even more tasty, just wash them really good (leave the skin on, naturally remove bad parts), cut them into slices/pieces and let them sit in cold water for 20-30mins(coldest faucet is enough), at this point i take my meat from fridge to let it warm up so that's perfect 20-30mins = meaning you just put cold water in bowl with potatoes + take out meat from fridge and that's it go do w.e. for 30mins.

    You can start cooking everything at the same time (potatoes in air fryer and chicken/beef or w.e. else in pan or vice versa). I also LOVE adding a can of red beans and hortex mexico mix(this mix would be enough, but i just love beans lol), one of the easiest and most delicious foods i make because you can combine all of them and eat in a bowl and the only "time consuming" work you can ignore is letting potatoes sit in water (for me they stay harder/crispier, hence why i prefer that and dont mind it)

    Also alternative sauce for chicken could be gochujang+honey+garlic+some vinegar = phenomenal combo with sweet potatoes+those veggies, at least for me.
