Day 30 of 30 Days of Healthy & High-protein Breakfast Meal Prep Recipes: Pumpkin Spice Pancake Bowls😍 These contain about 27g protein per serving & no protein powder!

Ingredients for two servings:
1 cup / 2.4 dl / 250g high-protein Greek yogurt, the yogurt I use contains 13g protein per 100g
1/2 cup pumpkin puree (1.2 dl)
4 eggs
1 -2 tablespoons maple syrup/honey
2 teaspoons vanilla extract
3/4 cup / 1.8 dl all purpose (gluten-free) flour or 1 cup / 2.4 dl (gluten-free) oats
2 teaspoons baking powder
2 teaspoons pumpkin spice

Optional toppings:
1-2 pieces 80% dark chocolate chunks
Handful of crushed pecans

1. Mix the wet ingredients together. Add the dry ingredients and stir to combine. If using oats: add all the ingredients into a blender and mix until smooth
2. Pour into greased glass containers or ramekins. Add the toppings
3. Bake at 180 Celsius degrees / 350 in Fahrenheit for 25-30 minutes
4. Store in the fridge. Reheat in the microwave before serving! Serve with maple syrup for extra sweetness
