Ingredients:
For the filling:
* 1 white onion, finely chopped
* 1/2 cup mushrooms (shiitake or any variety), finely chopped
* 1 tsp garlic powder
* 1 tbsp ginger, grated
* 1/2 lb (250g) ground beef or pork
* 1 tbsp soy sauce
* 1 tbsp sesame oil
* 1/2 tsp salt
* 1/4 tsp pepper
For the wrappers:
* Store-bought gyoza wrappers (or make your own)
For cooking:
* 2 tbsp vegetable oil
* 1/3 cup water
For dipping sauce:
* 2 tbsp soy sauce
* 1 tbsp rice vinegar
* 1 tsp chili oil or sesame oil
* 1/2 tsp chili flakes (adjust to your spice preference)
Instructions:
1. Prepare the Filling
1. In a large bowl, combine white onion, mushrooms, garlic powder, ginger, and ground beef.
2. Add soy sauce, sesame oil, salt, and pepper. Mix until well combined.
2. Assemble the Gyoza
1. Place a gyoza wrapper on a flat surface.
2. Add 1 tsp of filling in the center.
3. Wet the edges with water, fold the wrapper in half, and pinch to seal. Optionally, pleat the edges for a traditional look.
3. Cook the Gyoza
1. Heat 1 tbsp vegetable oil in a large non-stick pan over medium heat.
2. Place gyoza flat side down in the pan. Cook until the bottoms are golden brown (about 2 minutes).
3. Add 1/3 cup water to the pan and cover immediately to steam the gyoza. Cook for 3-4 minutes or until the water evaporates.
4. Remove the lid and let the bottoms crisp up for another 1 minute.
4. Make the Dipping Sauce
1. In a small bowl, combine soy sauce, rice vinegar, chili oil (or sesame oil), and chili flakes. Stir well.
5. Serve
Serve the gyoza hot with the spicy dipping sauce on the side.
