Recipe
Pasta:
2 Cups 00 or all purpose flour
1 Tsp fine sea salt
2 Large eggs
3 Egg yolks
1 Tbsp water, if needed
-Add flour and salt to a large bowl. Whisk together. Dig a well in the center of the flour and add the eggs and egg yolks. With a fork, beat the eggs and start to add the surrounding flour.
When about half of the flour has been added, use your fingers to finish mixing the dough. If needed add 1 Tbsp of water or more to absorb all of the flour.
-Once your dough forms a nice ball, remove from the bowl and knead for 4-5 minutes on a lightly floured surface. Dough should be smooth and have an elastic feel. Wrap the dough in plastic and let sit at room temperature for 30 minutes.
Cut dough into fourths, wrapping the pieces that aren’t being used so they don’t dry out. Use your pasta machine to create desired type of pasta.
Lightly flour pasta so it doesn’t stick together.
-Boil water in a large pot. Add salt and cook pasta for about 4 minutes, until al dente.

Sauce:
12 Oz Sausage, sliced
1 Tbsp olive oil
2 Tbsp butter
3 Cloves of garlic, minced
1/2 a Shallot, chopped
2 Tbsp tomato paste
1 (14 ounce) can tomato or marinara sauce
3/4 Cup heavy whipping cream
Salt & pepper to taste
1/4 Tsp Italian seasoning
1-2 Tsp sugar
Parmesan cheese
-In a skillet over medium high heat, add olive oil and cook sausage until crispy. Remove and set aside. In the same skillet, add butter, garlic, and shallot. Sauté for 1 minute. Add tomato paste, tomato sauce, and cream. Stir and cook for 5 minutes, until sauce thickens.
-Season with Italian seasoning, salt, and pepper. Add sugar if needed, about 1-2 Tsp. Add pasta and sausage to the sauce. Serve with fresh Parmesan cheese and enjoy!
