i either use kitchenaid stand mixer or a danish dough whisk. i have the same pan. don't need to coat it with anything, the bread comes right out. the corrugated sides make it slide out.
i made this bread this afternoon. Wonderful recipe, Chef. Made two loafs, one with a brown sugar butter bath after and it was to die for.

In baking it isn’t “measure” carefully, it’s “weigh” carefully if you want consistent results..flours can have vastly different volumes when moisture content varies, get a decent scale..also, weigh your proofing bowls if they’re metal and scratch or write their weights on the bowls..it’s a handy trick to subtract the bowl weight when dividing the dough later when the tare function isn’t an option.
