What You’ll Need:
1 lb Black Eyed Peas
3 Smoked Pork Shanks or Ham Hocks
1 Onion
3 Carrots
3 Clove Garlic
1 Tbspn Brown Sugar (Packed)
2 Bay Leaves
2 Tbspn Chicken Bouillon
Salt
Pepper
2 Jalapeno (De-Seeded)
2 Cups Salt Free Chicken Broth
1 Green Bell Pepper
Green Onion (Optional)
Parsley (Optional)

Instructions:
In a large pot, bring 10 cups of water to a boil. Add pork shanks and boil for 1 hour (monitor and add water if needed you want the meat to be covered. Rinse and drain beans checking for bad beans. Place in a bowl and pour boiling water over top. Let soak for 35 minutes. Drain and rinse. Remove pork from water you should left with about 3-4 cups of broth after the boil. Remove meat from bone and chop. Chop vegetables. Add meat, veg, and beans to the pot. Add 4 cups of salt free chicken broth plus 2 Tbspn chicken bouillon paste. Add garlic, salt, pepper and 1 Tbspn packed brown sugar. Bring to a boil then simmer for 45 minutes to 1 hour depending on how tender you want your beans. Serve over white rice.
