I've done a snake method on my 22.5 inch Weber grill with 2 racks. Took me two refills of coals and 4 hours to cook it. But i can see why only smoking for 2 hours, then finishing it wrapped in the oven is way better. Keeps the moisture locked in. No wonder my ribs were kinda dry. Love this technique.
