  1. yes to keep the shrimp flat the under side cuts will do it but why? Perhaps the vein on the underside (not on top… which is the "Poop" vein which is not really a vein but an intestine…) (the underside) curls up the shrimp. So cutting the underside breaks up the under real vein but we could remove that also with a toothpick or however so it will not curl..? HOWEVER…

    A sure way to keep it flat even after cutting the underside is to turn it back to belly down… lightly pinch and pull… you might hear a crunch.

  2. I've been eating and cooking boiled shrimp. For 50 years put them in very well seasoned boiling water DO NOT BOIL 6 to 10 minutes leave them in just until they turn pink stir once and remove any more they'll turn hard & rubbery
