Crispy Pork Belly Recipe
Ingredients:
1 piece of pork belly (sized to fit your air fryer)
1-2 tablespoons salt (divided)
1 teaspoon white pepper
1 tablespoon sugar
2 tablespoons black bean sauce
2 tablespoons Chinese rice wine
1 tablespoon baking soda
Water (for massage and boiling)
Instructions:
Prepare the Pork Belly:
Ensure the pork belly is clean and fits into your air fryer.
Cut a few slits into the meat side of the pork belly.
Marinate the Meat:
Rub the meat side of the pork belly with salt, white pepper, sugar, and black bean sauce.
Drizzle with Chinese rice wine and rub the marinade in, ensuring it’s well distributed.
Prepare the Skin:
Place the pork belly meat side down.
Sprinkle a generous amount of baking soda over the skin.
Add some water and massage the skin to ensure the baking soda is evenly distributed.
Rub the skin with enough salt.
Leave the pork belly uncovered in the refrigerator overnight to dry out the skin.
Boil the Pork Belly:
The next day, take the pork belly out of the refrigerator.
Boil in a pot of water for 5 minutes on each side to remove impurities.
Remove the pork belly from the pot and poke many holes into the skin using a fork or skewer.
Air Fry the Pork Belly:
Place the pork belly in the air fryer, meat side up.
Air fry at 180°C (350°F) for 30 minutes.
Flip the pork belly over and air fry at 200°C (390°F) for an additional 25 minutes, or until the skin is crispy and golden brown.
Serve:
Remove the pork belly from the air fryer.
Chop into pieces and enjoy!

I could see some advantage to combining all the spices together in a small bowl and mixing thoroughly prior to applying to the pork which would give it a cleaner, more evenly distributed flavors..

will check out by giving to sons they have c. fryer. many others hard crust, dry interior, your blanching made sense, my pork belly old fashion way is perfect, but 24 hrr marinating ,drying. is long time. cooking time short.
