Quick question… I got the Cosori fryer based on your earlier review. The handle has fallen off of the basket. Is this a common issue? I never have cooked on hi temp, and use it 4 or 5 times a week. In about a year, the plastic on the handle has just fallen to pieces, letting the bolts fall out.π’ is this common?

Mine comes out fine. I don't understand why they are getting bad chicken. I cook 4 bone-in chicken thighs for 18-22 minutes at 390Β°F and they come out moist and great. π If they didn't, I'd be back to the conventional oven regardless of the grueling clean-up.
As someone who has been cooking for most of his life, and in several restaurants too, I'm always amazed how people think cooking with a thermometer is new. I have always cooked with a thermometer and it has always been a required tool at restaurants. You don't need a big bulky instant read one at all the analog ones work just as good and are small enough to fit in your pocket. In fact all my chef shirts have a small pocket on the sleeve that is made to hold a thermometer.

My question is: when using the Cosori Dual Blaze and one of your chicken (or any recipe) should I select Air Fry that utilizes both burners or an option for only one burner?

I agree with you on bone in chicken thighs and wings. I make those weekly. I even learned to make an entire chicken in air fryer from you. But chicken breast and steak, nope for us. I never cook chicken breast to USDA recommendation! It's awful. But you do you.

are you planning on testing/buying the new Cosori 10 litre/quart twin fry ?
Rule of thumb I have found works with all meats: Soak the meat in brine (water saturated with brown sugar and salt) for a few hours or overnight before cooking. I find chicken (such as a whole chicken) doesn't even need seasoning at all. For pork and steaks I like to sear the outer surfaces in an oiled frying pan before chucking them in the air fryer. The brine makes it harder to overcook too. Stays nice and juicy.

Chicken Thighs in the air fryer are in fact the absolute bomb! Cant get enough..and so stinking fast!
Cathy, thank you for your informative and MUCH needed episode. I quite enjoyed the episode. Clearly you are very experienced and knowledgeable. An instant read thermometer is as essential to the kitchen of today as a spatula. May I add a funny thing I noticed in this episode, βchicken,β the amount of times repeated is so funny. I counted 56 times. You should have everyone check to see if I miscounted and that way theyβll watch it twice and learn more from you. Have a joyful day.
I reheated some chicken strips that we had made in the regular oven. The preset for reheat on my ninja AF 100 was at 350Β° in a 4 quart basket, for 15 minutes!!! It only takes about eight minutes. Itβs a good thing. I didnβt just blindly follow that setting and leave them in there that long because they would have been burned!!!

I think I will start the pounding of my chicken breasts. I don't recall if they had been dry, but good to know. And while I know about doing the resting for steaks and meat, I hadn't really thought about it for chicken. I'm also going to start paying attention to that too. Thanks for the reminders.
