I feel like in Hawaii any pre ferments I have done are ready much sooner than specified- probably because of the warmth and moisture in the air. I wonder if it's the same in the mainland (edit: East) southern areas.

Oh lol, good timing. I got some cosmic crisp apples for free and was just telling my brother this morning how much I don't like them. Like at all. But I haven't tried baking them, so I will give this a try for sure!

Have you ever made a pullman loaf of bread? My daughter purchased me on from the USA Pan tent sale of scratch and dent pans. She got me a few pans that I love. The pullman 13-inch pan has really got me excited to try. I need recipes. This whole wheat apple loaf might be an interesting start. Thanks

Here's a challenge: I don't have a full-sized oven, just a decent but dependable toaster oven (TOSHIBA AC25CEW ~ 11x11x6 inch internal capacity with convection function)…how about small loaf baking?
