1 g / ¼ teaspoon instant yeast

115 g / 1 cup whole wheat flour
32 g / ½ cup wheat bran, plus more for finishing
12 g / 1 tablespoon fine sea salt
3 g / 1 teaspoon instant yeast
173 g / ¾ cup water, about 105°F / 40°C

  1. I feel like in Hawaii any pre ferments I have done are ready much sooner than specified- probably because of the warmth and moisture in the air. I wonder if it's the same in the mainland (edit: East) southern areas.

  4. Have you ever made a pullman loaf of bread? My daughter purchased me on from the USA Pan tent sale of scratch and dent pans. She got me a few pans that I love. Here's a challenge: I don't have a full-sized oven, just a decent but dependable toaster oven (TOSHIBA AC25CEW ~ 11x11x6 inch internal capacity with convection function)…how about small loaf baking? Not buns, but actual scaled-down loaves? Am I asking the impossible or have I missed clever ideas for small-batch bread recipes? Thanks for everything you share and for being you. ✨
