How to BBQ Pork Butt in a Ceramic Grill | Primo Oval XL 400



I tested out the new Primo Oval XL ceramic grill w/ a low and slow pork butt (aka “Pork shoulder” or “Boston Butt.”) Ceramic Grills make great BBQ pulled pork so if you have a Primo (or Big Green Egg, Kamado Joe, Vision kamado, etc), this video will show you how to bbq smoke it correctly.

The rub and sauce I used are listed below if you can’t find them locally.

  1. Great video. Your production value is awesome. I have a round Kamado from Saffire Grills and I can fit every cut of meat around. I wonder if I added a Primo oval to my collection if that would be better to cook on than the round. How do you like the Primo compared to your Kamado Joe!?! Better, not as good, or just different?

  2. As usual another great video! Looking for advice. I have a 18” WSM, Bradley Smoker, Rec Tec Bull 700 and a 22” Weber Kettle which I haven’t assembled in the 2 years I’ve owned it. Have thought about the Primos, Green Egg etc…. would you recommend the Primos and if so which one(s) of my collection would it replace? Thanks

  3. Love, love, LOVE my Primo oval XL400! I have had it for 6 years and it is the definition of set it and forget it. Holds temps like an oven and is so versatile with the split firebox. I couldn't ask more of any grill/smoker.

  5. Oh yeah. Primo is nice to you. I just had a man (three hours from my home) GAVE me his Primo Round! Of course I got it! I found out why he was having low temp problems as the seals was gone and the firebox was CRACKED. I called Primo, the MOMENT I told them about it they RUDELY told me they would NOT stand behind the unit (so much for the 15 yr warranty) & quoted a price that made me cry. So…quick research…order at Lowes…get a small tube of refractory cement…and now I'm cooking. And Primo – if you're reading this – I am NEVER going to forget how rude that lady was to me on the phone.

  8. Hey Justin, once again you have put out an exceptional video! I have watched and subscribed to your channel for the past couple years now and have enjoyed watching each and every one of your videos and seeing how far you have came along with your cooking/video skills to make each video more and more enjoyable! My question to you is do you have any recommendations towards the Primo XL and have you found any faults or dislikes on the grill (in your professional opinion). I have been an avid grilling fanatic for about 10 years now and have accumulated an arsenal of grills and smokers (18 to be exact lol). Everything from a Weber Smokey Joe up to a trailer type HBT reverse flow smoker. I have been in the market for a ceramic cooker now for the past couple years but couldn’t ever bring myself to spend upwards of $2,000 on that style cooker. But recently have found a great deal on a Primo XL that was used at the Jack Daniels BBQ contest for less than 4 hours total so I decided to go ahead and bite the bullet on it for $600. It comes with a cart but no accessories, so I will be purchasing the accessories separate. So any type of input and opinions on this grill that you could throw my way would be greatly appreciated. Thanks!!

  10. This sounds great. I've only done pulled Pork once on my Primo. It came out good but I like the idea of splitting the box. Also I can't find the link to the Old Hickory Pit. Love to try it. I usually make my own but always up for a good BBQ sauce.

I know this idea would take off like the SNS and if marketed the same way as the SNS there can be great success. With you being king of editing I can see you all over this product!   12. Having access to stir the coals is pretty cool. Sometimes if I don't have enough lump charcoal in my Akorn, the fire burns down the middle of the charcoal pile. The air flow increases and the temperature rises.
